A number of premium batches of Barossa Shiraz, were used to blend this wine. Treated separately in small open fermenters, the wines were plunged and pumped over on their skins for 14 days during fermentation at 25 deg C, allowing soft extraction of tannin and spicey flavours. Using both French and American oak, the wine was matured over 15 months.
The nose displays blackberry ripe fruits, with clove and pepper notes, with a palate of forest fruits, vanilla, clove, cedar notes, with soft tannin, and a spicy finish.
